My sister insist to home make banana cake at 10pm tonight. Prepare and bake, we manage to on bed at 12am (bake 2 patch due to small oven)
150g plain flour or wheat flour
1 teaspoon baking powder
1/2 teaspoon salt
120g butter room temperature
90g sugar (mix partially brown sugar for interesting color and lighter sweet)
2 big bananas or 3 small bananas, fully ripe for sweeter taste. Mashed till paste. Taste to adjust sugar level.
1 teaspoon vanilla essence
In mixer, add and mix in order:
1.Add B together mix till combine
3.A mixture through flour sifter
4.Bananas and vanilla
Use butter to gee baking tray.
Preheat oven and bake for 25 to 40 mins or till toothpick come out not wet.
Don’t over cook as it will be dry
Cake should be golden color, crispy on the outside, soft and most in side.
I decor with some slide of banana added before bake.
Tip for using air fryer:
If using small cupcake or pie tray, 25 mins to 30 mins is enough
If using 15cm tray need up to 40 mins.
